Top 5 Deer Jerky Recipes
I’ve pulled all my favorite deer jerky recipes together to create one master go-to list!
1) Basic Deer Jerky
This recipe can be used for jerky made from strips cut from a steak or mixed into ground meat.
INGREDIENTS:
1/3 cup Soy Sauce
2 tablespoons Liquid smoke
1 teaspoon salt
¼ teaspoon pepper
½ cup water
Dash of hot sauce of your choice
Marinate the meat for at least 1 hour.
If you are using an oven: Lay the strips out on racks. Bake in the oven on 150 degrees for 8-12 hours.
If you are using a dehydrator: Lay the strips on the trays. Dehydrate on 150-160 degrees for 6-8 hours.
2) Hickory Deer Jerky Recipe
Grind the meat and mix a packet of Eastman Outdoors Hickory seasoning & cure.
Load the mixture into a jerky gun and squeeze onto the trays to dehydrate.
Dehydrate on 145 degrees for 4-5 hours or until dry.
3) Bourbon Deer Jerky
INGREDIENTS:
2 cups deer – All fat trimmed off and cut into ¼“ thick strips
1 cup water
1 cup bourbon of your choice
1 tsp ground red pepper
2 tbsp Worcestershire sauce
2 tbsp soy sauce
1 tbsp salt
2 cloves sliced garlic
Add all ingredients to a bowl and marinate the meat for 1 hour.
If you are using a smoker: Load into smoker on racks for 6-8 hours on 170 degrees
If you are using an oven: Lay strips on racks and bake on 160 degrees for 6-8 hours
4) Jack Daniels Deer Jerky
INGREDIENTS:
1 pound deer meat – sliced into strips ¼” thick
1 cup soy sauce
½ cup packed brown sugar
2 tbsp Jack Daniels Whiskey
1 tbsp ground paprika
3 cloves minced garlic
¼ tsp salt
Mix all ingredients in a bowl with the meat and marinate for 12-24 hours.
Pat the pieces dry on a paper towl and lay on racks.
Bake in the oven on 170 degrees for 5-6 hours.
5) Low-Sodium Deer Jerky
INGREDIENTS:
3 pounds deer – sliced into strips, ¼” thick
½ cup water
1 tsp of each: liquid smoke, pepper, cayenne, garlic, chili powder, onion powder
4 tbsp reduced sodium salt
Marinate all the meat for 12-24 hours.
Pat the pieces dry and lay on racks to put in the oven.
Bake in the oven on 170 degrees for 5-6 hours.

Oh man! The hickory sounds so awesome, but how can you go wrong with Jack Daniels? I’m torn, but know I can’t wait to try these out come fall. I bet these would be just as good using some elk! Thanks for sharing.
